Saint Nicholas Day

In our house we celebrate Saint Nicholas Day. This is on December 6th and is a holiday for German kids. I am half German. I am half of a lot of things. Half Irish, Half German, Half Native American, Half Scottish, Half English (From England not just America, it is confusing because we both speak English) and half German.
Saint Nicholas Day is a really fun holiday and you should try it.
Basically you put a wooden shoe out on your doorstep in the evening and then Saint Nick comes and If you have been good, he fills shoe with delicious fruits, nuts and candies, oh and 3 gold coins. If not good, you get potatoes, coal, or twigs. You also get a note from Saint Nick on maybe a few things you need to work on before Christmas. Last year I needed to work on cleaning my room, yeah, that still needs a little work and probably my spelling tests! I have never gotten potatoes, coal or twigs...Though I wouldn't mind a potatoes! Yum!

But my favorite part of Saint Nicholas day is the food. One of my favorite things to make with my Mom are potato pancakes. Here is her recipe...

There is a big German word for it (Mom will have to help with the spelling)

Ingredients:


  • 1 about 2 lbs of potatoes (Russet)
  • 1 - 2 tablespoons thick sour cream
  • 1 egg
  • 2 - 3 tablespoons flour
  • dash of salt
  • 1 medium onion
  • light canola oil
So far pretty easy, right?
Here is the fun part...
Peal and rinse the potatoes. 
Grate the potatoes. We have a cool grater with a funny chef guy on the top.
Let potatoes drain for a bit. 
Then put potatoes into a bowl and mix in the sour cream., 
add the egg, flour, salt and grated onion (also grate up the onion-sorry forgot that part). 
Mix everything with your hands (wash hands first). 
Preheat a fry pan with the oil on medium.
Make little balls in your hands like a meatball and then squish flat.
Make sure to have paper towels on hand, it gets messy.
Put in the oil and fry until golden on the bottom then flip and finish the other side until golden as well. 
Let pancakes drain on a plate with paper towels.

These are simply divine. They are good with sour cream or I like ketchup on them. Enjoy!
